Caramel Mocha Iced Coffee

If you like Starbucks´s Caramel Mocha Frappuccino, you´ll love this recipe. It´s basically a homemade version of the same thing. Made with fresh plant-based milk in the NutraMilk and using almond cashew milk we have made a deliciously sweet caramel sauce. Enjoy


For Frappuccino

  • 2 shots espresso (or 1/3 cup of strong black coffee)
  • 3/4 cup cold plant-based milk made with the NutraMilk (I used almond-cashew milk)
  • 2 cups ice
  • 2 tbsp. sugar (optional)
  • 3 tbsp. caramel sauce made with the NutraMilk
  • whipped cream 

For caramel sauce 

  • 2 cups almond cashew milk made with the NutraMilk
  • 1/2 cup brown sugar
  • 1/8 tsp. vanilla essence
  • 1/8 tsp. baking soda 

For almond cashew milk

  • 1/2 cup (75g) almonds
  • ½ cup (75g) cashews
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional) 


For almond cashew Milk

  • Start by making fresh almond cashew milk with the NutraMilk:
    • Place almonds and cashews in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Open the container lid, add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

For caramel sauce

  • Place almond milk in a medium sauce-pan and bring to a boil. Gradually add sugar while stirring with a wooden spoon, you will notice that it will immediately change color.
  • Reduce heat and simmer uncovered, stirring occasionally (to avoid burning and sticking to the bottom) until the consistency changes.
  • It will take about 30 minutes or for caramel sauce to have a good consistency to be able to drizzle.
  • Place caramel sauce in a clean container and store in the refrigerator for up to 3 weeks.

For Frappuccino

  • Place the espresso, almond cashew milk, ice, sugar and 2 tbsp. of the caramel sauce into the NutraMilk or use a hand blender.
  • Blend until smooth.
  • Pour out into a glass and top with whipped cream.
  • Finish off by drizzling with the remaining tablespoon of caramel sauce. Enjoy!
