Here is a great way to include cauliflower in to your kids diets. These nutritious cauliflower tots are easy to make, completely plant-based and super tasty - your kids will not guess that cauliflower is the main ingredient. Served with a delicious plant-based aioli made fresh from almonds in the NutraMilk. Enjoy!

INGREDIENTS

For tots

  • 300 gr. cauliflower
  • 100 gr. cashew parmesan made in the NutraMilk
  • 1/2 onion, diced
  • 1/3 teaspoon salt
  • 1/2 teaspoon pepper (ground)
  • 1 tablespoon flax seeds (ground)
  • 3 tablespoons water
  • 1/3 cup gluten free breadcrumbs (optional)

 For aioli

  • ½ cup raw almonds
  • 1 clove garlic
  • ½-¾ cup water
  • ¼ cup vegetable oil
  • 1 tbsp. lemon juice, fresh
  • 1 tsp. Turmeric (optional)

INSTRUCTIONS

  • Start by making vegan parmesan cheese if you don´t have any made. Check out recipe here.

  • Wash the cauliflower and steam it for 10 minutes. Meanwhile, mix the flax seeds with the water in a bowl and set aside.
  • When the cauliflower is cooked, remove from the heat and transfer it to the NutraMilk. Chop the onion, add it to the NutraMilk along with rest of ingredients except for the breadcrumbs. Mix for 1 minute until well incorporated.

  • Preheat the oven to 200ºC and, meanwhile, form the tater tots. To do this, take portions of dough with the help of a spoon, form cylinders of about 3 cm. long by 1.5 cm. wide and, as they are being formed, place them in a bowl with the breadcrumbs and right after on to baking dish coated with oil or on a baking tray covered with baking paper. When all the tater tots are formed, put the baking dish or baking tray in the oven and bake for 20 minutes.

  • After this time, turn them over with the help of two teaspoons so that they cook on the other side and bake for 10 more minutes. After this time, remove the baking dish (or baking tray) from the oven and serve.
  • Meanwhile make your aioli:
    • Place almonds in the NutraMilk and process for about 7-8 minutes or until you reach a nut butter consistency.
    • Add the rest of the ingredients and process until smooth. Start with 1/2 cup water and see if you like the consistency, if you prefer a thinner consistency, gradually add more water. Enjoy!
