For all the coffee lovers, here is another way to get your coffee during the hot weather months.

These coffee popsicles are creamy, nutty and full of healthy nutrients thanks to our cashew butter and almond milk made fresh in the NutraMilk.

INGREDIENTS

For popsicles

  • 1 ½ cup almonds milk made with the NutraMilk
  • 1/4 cup cashews cashew butter made with the NutraMilk
  • 1/4 cup honey, maple syrup or sweetener of choice*
  • ½ cup plus 2 tbsp. cup cold brew coffee, divided
  • 1 tbsp. coconut oil (optional)

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

For cashew butter

  • 2 cups (300g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)

    INSTRUCTIONS

    • Start by making fresh almond milk with the NutraMilk:
      • Place almonds in the NutraMilk container.
      • Press Butter cycle, set for 7 minutes.
      • Press Start.
      • Add water and replace lid.
      • Press Mix (do not change the default Mix time).
      • Press Start.
      • Press Dispense, open spigot and fill your container with almond milk.
    • To make cashew butter
      • Place cashews and salt in the NutraMilk container.
      • Press Butter cycle, set for 5-6 minutes.
      • Press Start.
      • Open the container lid.
      • If necessary, set for an additional 1-2 minutes for a creamier butter.
    • Pour about 1-2 tbsp. of coffee in each popsicle mold, so the tips are all coffee.

    • Freeze for about 1-2 hours until firm.
    • Combine almond milk, cashew butter, sweetener of choice, coconut oil (optional) and 2 tbsp. coffee in the NutraMilk and ¨Mix¨ until smooth.
    • Take out from freezer and fill popsicle molds to the top with nut milk coffee mix.
    • You can also leave a little space and add more coffee on top to create layers if you wish.
    • Freeze for about 4 hours or more until firm. Enjoy!

    Notes: For paleo or Keto diets- use appropriate sweetener such as monk fruit sweetener.
