These rich tasting almond butter brownies are hard to resist. They are gluten free and vegan. The almond butter and milk adds a rich nutty flavor and all the healthy nutrients of almonds. Enjoy!

INGREDIENTS

  • 1/2 cup (120g) almond butter made with the NutraMilk
  • 3/4 cup (180 ml) almond milk made with the NutraMilk
  • 1 ½ tsp. vanilla extract
  • 3/4 cup (115 g) gluten-free four
  • 3/4 cup (150 g) light brown sugar
  • 6 oz. (160 g) dairy-free dark chocolate chips or chunks
  • 4 Tbsp. (30 g) cocoa powder, sifted
  • ¼ tsp. baking powder
  • ½ tsp. salt

Matcha frosting

  • 1 1/2 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 1 or 2 tbsp. plant-based milk made with the NutraMIlk
  • 1 tbsp. of butter of choice or oil

Chocolate drizzle

  • ¼ cup dairy-free chocolate chips or 2 tbsp. cacao powder
  • ½ tsp. coconut oil

For almond butter

  • 2 cups (300g) almonds
  • 1/8 teaspoon Pink Himalayan salt (optional)

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Start by making almond butter & almond milk if you don’t already have a batch made.
    • Place almond and salt in the NutraMilk container.
    • Press Butter cycle, set for 12-13 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.

For almond Milk

  • Start by making fresh almond milk with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with almond milk.
  • Preheat your oven to 180 C (350 F) and line a 9 x 9-inch baking tray.
  • Add the dark chocolate to a small bowl and microwave for 1 – 2 minutes. Check every 20 seconds and whisk until the chocolate has melted. Quickly add almond butter, milk and vanilla extract to the chocolate then whisk until completely combined.

  • Add the flour, sugar, cocoa powder, baking powder and salt to the wet ingredients then fold again until a batter forms. Transfer the batter to your baking tray.
  • Bake brownies in the oven for 18 – 25 minutes. Place a toothpick in the middle. The brownies will be complete when a few moist crumbs remain on the toothpick.

  • Allow the brownies to cool for 1 hour. Meanwhile prepare frosting by mixing ingredients with a hand mixer until you get a smooth spreadable texture. Whisk chocolate drizzle ingredients and set aside.
  • Once brownies have cooled. Spread matcha frosting and drizzle chocolate on top. Place in the refrigerator 30 minutes until set and dig in!
