You can make this recipe ahead of time and reheat all week for a quick and healthy breakfast or snack. Made with whole ingredients, all plant-based, including fresh peanut butter and almond milk created in the NutraMilk. Enjoy! 

INGREDIENTS

For baked oatmeal

  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 over ripe bananas
  • 1 ½ cups almond milk made with the NutraMilk
  • ¼ cup creamy peanut butter made with the NutraMilk
  • 2 tbsp. maple syrup
  • 1 tbsp. ground flaxseed
  • 1 tsp. vanilla extract

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional) 

For almond milk

  • 1 cup (150g) almonds
  • 6 cups (1.5 quarts) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Start by making fresh almond milk with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with almond milk.
  • Making the peanut butter
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • Preheat the oven to 375° F. In an 8×11 inch baking dish, combine the oats, cinnamon, baking powder and salt.
  • In a large mixing bowl, mash the bananas, then add the almond milk, peanut butter, maple syrup, flaxseed and vanilla extract. Allow the mixture to stand for 5 minutes for the flaxseed to set.

  • Pour over the wet ingredients over the oat mixture and stir to combine.
  • Bake uncovered in the preheated oven until the top of the oatmeal is golden and the mixture is set, about 30-35 minutes. Remove and allow it to cool for 5 minutes.
  • Serve with drizzled peanut butter and banana slices, if desired.
