When making almond milk in The NutraMilk, all you have leftover are the skins... but as Abby says: "I don’t even like to waste the little leftovers from making almond milk in my NutraMilk! So, I came up with these Vanilla Birthday Cake Bites using the almond skins. Take 10 minutes after making your almond milk to make this amazing snack. It’s perfect for when you want to “Snack Naked” (aka my term for when you snack on foods that are plastic and package free!).

VANILLA BIRTHDAY CAKE BITES - no waste, all taste! (serves ~20)

Ingredients

  • ALMOND SKINS LEFTOVER FROM MAKING ALMOND MILK (~1/2 CUP)

  • 1 CUP PITTED MEDJOOL DATES

  • 1 1/4 CUPS RAW WALNUTS

  • 1/2 CUP COCONUT FLOUR (OR ALMOND FLOUR)

  • 2 TSP VANILLA EXTRACT

  • ½ TSP CINNAMON

  • PINCH OF SEA SALT

  • SHREDDED UNSWEETENED COCONUT

Directions

  1. After making Almond Milk, leave the leftover almond skins in the NutraMilk. The dates to the NutraMilk and blend on the Butter setting for about 1 minute.

  2. Add all other ingredients and blend all the ingredients together on the Butter setting for about 2 minutes until they are all combined in a loose dough.

  3. Scoop out 2-Tablespoon amounts using a spoon or cookie scooper. Use your hands to roll each section into balls with hands or release lever on scoop. Place all balls onto a plate.

  4. Roll each ball in the shredded coconut and store in a glass container in the refrigerator or freezer. They will last in the fridge for about 1 week and the freezer for one month.
