Green chia pudding for St. Patricks or even xmas! We used just a bit of chlorella and pistachio milk made in the NutraMilk to give it a natural green hue.

This makes a great dessert or sweet snack. The combination of pistachio, coconut, banana and cashew butter blend perfectly into a sweet exotic flavor your taste buds will love. Give it a try!

INGREDIENTS

For coconut Chia Pudding

  • 3/4 cup chia seeds
  • 2 1/4 cup pistachio milk or other plant-based milk
  • 3-4 tablespoons dried coconut
  • 1 teaspoon ground cardamom
  • 1 tsp. chlorella powder (for a natural green color)

pistachio-banana Nice Cream

  • 4 bananas, sliced into big pieces
  • 1/4 cup cashew butter or pistachio butter made with the NutraMilk
  • 1/2 cup pistachio milk or other plant-based milk+ more as needed to blend together other ingredients
  • 1 tsp. chlorella powder (for a natural green color)

For pistachio milk

  • 1 cup pistachio nuts (130g)
  • 1/4 teaspoon pink Himalayan salt (optional)

INSTRUCTIONS

For pistachio Milk

  • Start by making fresh pistachio milk with the NutraMilk:
    • Place pistachios in the NutraMilk container.
    • Press Butter cycle, set for 5-6 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with pistachio milk.
  • Make the chia pudding the night before by mixing all ingredients in a bowl for a few minutes until well combined. (I like to make mine in a glass Pyrex container with airtight lid for easy storage.) Store in refrigerator overnight. Note: The longer the chia pudding sits the thicker it becomes. If you don’t have time to make the night before, you can make day of. Just add less nut milk. The chia pudding should start to thicken up after about 10 minutes.

  • Slice the banana into large pieces and freeze on a baking sheet or cake/pie pan overnight.
  • Process the frozen banana, nut butter and nut milk in the NutraMilk until well combined. The consistency should be like soft serve.

  • Layer the chia pudding and the pistachio-banana nice cream in a glass. Top with some chopped nuts or any toppings you like. Enjoy!
