Basketball Cookie Sandwiches

Basketball Cookie Sandwiches with Carrot Dessert Hummus.

INGREDIENTS

For carrot dessert hummus

  • 1 cup chickpeas
  • 2 tsp coconut oil
  • 1/8 tsp vanilla
  • ¼ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 2 tbsp. vegan Dulce de Leche or any nut butter of choice made with the NutraMilk
  • ¼ cup carrot pure

For cookies

  • cookies of choice.
  • 1 tsp, activated charcoal to decorate/draw lines.

INSTRUCTIONS

  • Making almond butter*
    • Place almond and salt in the NutraMilk container.
    • Press Butter cycle, set for 12-13 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • Add all dessert hummus ingredients in the NutraMilk and press ¨Mix¨ until creamy and smooth.

*Choose your favorite nut butter for this dessert hummus or better yet for a sweet nutty taste use Vegan Dulce de Leche. Check out our recipe here.

  • Use cookies of choice: Use a brush and draw basketball lines with activated charcoal (mix 1 tsp. or less with a little bit of water).
  • Spread dessert hummus on one cookie and use the other to create a sandwich.
