Banana Sushi

One of my favorite snack ideas- Banana sushi!

The whole family will love these! They are quick and easy to make, delicious and nutritious (checks all my box boxes). They are vegan, gluten-free, dairy-free and depending on which toppings you choose you can make them paleo and keto approved!

Also, a fun way to have your kids develop a love of cooking. The options for of ingredient combinations are endless- get creative! Choose a variety of your favorite nut butters made with the NutraMilk to change up the flavors and look! Don’t forget to come up with names for each sushi roll and remember your favorites for next time!

INGREDIENTS

  • 2-3 bananas
  • Nut butters made with the NutraMilk (I used peanut butter, almond butter and chocolate almond butter)

Possible toppings

  • Coconut flakes
  • Chocolate, chopped
  • Quinoa puffs
  • Pistachios, chopped
  • Granola and/or breakfast cereal
  • nuts & seeds of choice, chopped

For almond butter

  • 2 cups (300g) almonds
  • 1/8 teaspoon Pink Himalayan salt (optional)
  • 2 tbsp. cacao powder & sweetener of choice (chocolate almond butter)

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional)

INSTRUCTIONS

  • Start my making a few of your favorite nut butters in the NutraMilk so you have different flavors.
  • Making almond butter
    • Place almond and salt in the NutraMilk container.
    • Press Butter cycle, set for 12-13 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • For chocolate almond butter
    • Add 2 tbsp. cacao powder to almond butter & sweetener of choice (optional)
    • Press Mix.
  • Making the peanut butter
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.
  • Peel banana and cover evenly with choice of nut butter.
  • Place toppings on plates and set aside.
  • Place coated banana in the toppings of choice and roll completely over ingredient to cover completely.
  • Cut banana into ¼ inch pieces.

** You can do this a few ways. You can cut banana first in to sushi size pieces and then roll each piece over different toppings but this will take longer. Or use one banana per topping or half (so can cut banana in half after covering it in nut butter) and then cover with ingredients and cut into ¼ inch pieces.
