Cauliflower, Parsnip and Macadamia Mash

Recipe inspired by Australian Macadamias. 

INGREDIENTS

For macadamia milk

  • 1 cup (135g) macadamia nuts
  • 1 quart (946ml) water

For mash

  • 2 large parsnips (about 400g), peeled and chopped into 2cm cubes
  • 1 medium head of cauliflower (about 400g), broken into florets
  • ½ cup macadamias
  • ½ cup macadamia milk made with the NutraMilk
  • salt to taste

INSTRUCTIONS

For macadamia milk

  • Start by making fresh macadamia milk with the NutraMilk:
    • Place macadamia nuts in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid. Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with macadamia nut milk. 

For mash

  • Bring a large pot of salted water to the boil.
  • Add the parsnips and cauliflower, reduce heat and simmer until tender. Reserve ½ cup of cooking liquid before draining.

  • Place cooked veggies in the NutraMilk. Add the remaining ingredients including salt to taste and process until completely smooth. Adjust seasoning and add a little of the reserved cooking water if the mixture is too thick.
  • Serve with colorful garnishes such as finely sliced radish, micro sprouts, basil leaves, pomegranate seeds, and crushed roasted macadamias.
