Buffalo wings or better yet, vegan cauliflower buffalo bites are the perfect snack or starter for a party, game day or a holiday such as 4thof July. They are tender on the inside, crispy on the outside, tangy and spicy to the palate. And quite healthy as well! You will love these- give them a try- they are a crowd-pleaser!

INGREDIENTS

For cashew butter

  • 1 cups (150g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)
  • 1 quart (946ml) of water

For buffalo bites

  • 1 1/3 cup cashew milk or other non-dairy milk made with the NutraMilk
  • 1 cup whole wheat pastry flour, all-purpose flour or gluten-free flour mix.
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/8 tsp. black pepper
  • 1 tsp. paprika
  • 2 tbsp. nutritional yeast flakes
  • 1 cauliflower head, broken into florets
  • 10 oz Buffalo wing sauce
  • 1 cup vegan blue cheese or ranch dressing*
  • Celery sticks and carrots to serve

*Make your own dressing if you are on a special diet such as an aioli from cashew butter.

INSTRUCTIONS

For cashew Milk

  • Start by making fresh cashew milk with the NutraMilk:
    • Place cashews in the NutraMilk container.
    • Press Butter cycle, set for 3 minutes.
    • Press Start.
    • Open the container lid, add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense.
    • Press Start and open spigot- set aside 1 1/3 cup for recipe and fill your storage container with rest of milk for later use.
  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the milk, flour, and spices.
  • Place all the cauliflower pieces in the milk mixture and coat thoroughly.

  • Spread the cauliflower on the prepared baking sheet.

  • Bake for 20-30 minutes, or until light golden brown.

  • Once the cauliflower is crisp and golden, coat them with the Buffalo sauce and bake for an additional 5 minutes.

  • Serve with the vegan blue cheese and carrot and celery sticks.
