Apple-Lime Almond Milk

If your looking for a sweeter and even tastier almond milk, give this recipe a try! This is a great post-exercise beverage. The apple juice will help to rehydrate and provide the glucose for muscle glycogen store, which is the energy source of your muscles. The almonds provide protein, omega-6 fatty acids, antioxidants, and other nutrients that help muscles recuperate and accelerate the repair of damaged tissue post-workout.

This milk has a lovely flavor. Try pouring over crushed ice, or adding a sprig of mint. If you want more sweetness, use a full quart of apple juice (946 mL) and leave out the water.

Yield: 1 quart (4 cups / 946 mL)

Ingredients

  • 1 cup almonds (150 g)
  • 1¼ Tablespoon lime zest
  • 3 cups apple juice (710 mL)
  • 1 cup water (237 mL)
  • 1¼ Tablespoon lime juice

Instructions

  1. Place almonds and lime zest in the NutraMilk container.
  2. Press Butter cycle, set for 7 minutes.
  3. Press Start.
  4. Open the container lid, add apple juice, water, and lime juice. Replace lid.
  5. Press Mix (do not change the default Mix time).
  6. Press Start.
  7. Press Dispense.
  8. Press Start and open spigot to fill your storage container.

TIP: When using a small amount of zest, I use a potato peeler to take off the green lime rind (avoiding the white pith, which is bitter) and press into a measuring spoon.
