Falafel Salad Bowl with Vegan Ranch

Another delicious salad and totally customizable! Use any salad ingredients you like or have on hand. The falafel and the vegan ranch are the key ingredients here, both made using the NutraMilk and super easy to do. Enjoy!

INGREDIENTS

For vegan ranch

  • 1½ cup vegan mayo made with the NutraMilk
  • ¼ to ½ cup almond milk or plant-based milk of choice made with the NutaMilk
  • 1½ tsp. apple cider vinegar
  • 3 cloves garlic, crushed
  • ½ tbsp. dried parsley
  • 1 tsp. dried dill
  • 1 tsp. onion powder
  • ¼ tsp. paprika
  • ¼ tsp. pepper
  • salt to taste

For falafels

  • 14 oz. (400 g) can chickpeas, drained and rinsed
  • ½ cup chopped cooked pumpkin
  • ½ cup (50 g) almond meal or other flour made with the NutraMilk
  • 1 tsp. baking powder
  • 3 tbsp. nut butter of choice (you can uses whatever you have already made- I used almond-cashew butter)
  • 1 tbsp. lemon juice

For salad (amounts depend on how many salads you want to make)

  • Romaine lettuce chopped
  • Red cabbage, thinly sliced
  • Cucumber, thinly sliced
  • Cherry tomatoes, halved

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

For almond cashew butter

  • 1/3 cups (200g) almonds
  • 2/3 cup (100g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

Making almond milk

  • Start by making fresh almond milk which you will use to make the vegan mayonnaise and more for ranch dressing. Follow the recipe here for vegan mayonnaise.
  • Place almonds in the NutraMilk container.
  • Press Butter cycle, set for 7 minutes.
  • Press Start.
  • Add water and replace lid.
  • Press Mix (do not change the default Mix time).
  • Press Start.
  • Press Dispense, open spigot, and fill your container with almond milk.

Making almond cashew butter

  • Make any nut butter you like or use what you have in stock.
    • Place almond, cashews, and salt in the NutraMilk container.
    • Press Butter cycle, set for 7-8 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 2-3 minutes for a creamier butter.

Making vegan ranch

  • Mix together all ingredients in a bowl.
  • If mixture is too thick for your preference, add a little more milk.
  • Store in a jar in the fridge. The flavors will really come through after about 4 hours, but it’s still delicious before then.

Making falafels

  • Preheat the oven to 350°F.
  • Mix all of the ingredients together the NutraMilk until they're well combined.

  • Add your choice of flavors to the mixture in the blender (see below for some suggestions).
  • Roll the mixture into balls with your hands. If the dough is a little wet, add more almond meal or flour, a little at a time.
  • Place the balls on a silicone baking sheet or a baking sheet lined with parchment paper. Bake for 20 minutes or until golden brown.

  • Store in the fridge for five days, or freeze for up to two weeks.

Putting it all together

  • Choose any salad ingredients you like or have on hand and arrange your bowl as you desire. Drizzle with vegan ranch. Enjoy!
