Cauliflower Pizza Crust

Not your traditional pizza crust, but a much healthier option. It´s gluten-free, high in fiber, and loaded with health-boosting nutrients from the cauliflower. Most importantly it tastes so good! Add your favorite toppings. We used our Vegan Alfredo Sauce made with the NutraMilk and a few veggies. Enjoy!

INGREDIENTS

For crust

  • 1 cauliflower (approx. 4-5 cups cauliflower rice)
  • ½ cup oat flour (you can make it from rolled oats with the NutraMilk)
  • ½ cup shredded vegan cheese
  • 1 tsp pizza herbs (such as oregano, thyme, or Italian seasoning mix)
  • salt and pepper to taste

For toppings

  • ½ cup vegan Alfredo sauce made with the NutraMilk
  • ¼ cup spinach, cooked
  • ¼ cup corn, cooked
  • ¼ cup mushrooms, uncooked
  • ½ cup vegan cheese (optional)

INSTRUCTIONS

  • Preheat your oven to 400 degrees Fahrenheit.
  • Prepare cauliflower rice: wash and thoroughly dry cauliflower, cut it into medium chunks and discard the core.
  • Place cauliflower chunks in the NutraMilk and press ¨Mix¨ for 20 seconds or so until it resembles rice.
  • Add the cauliflower rice to a microwave-safe bowl, cover, and microwave for 4-5 minutes to soften. Alternatively, you could sauté the cauliflower rice in a pan on medium heat on the stove for 8-10 minutes. Then let it cool to the touch.

  • Transfer the cauliflower rice into a nut milk bag or thin kitchen towel. Drain the cauliflower by squeezing it until all the excess moisture is out. Squeeze as hard as you can!
  • Combine cauliflower rice, cheese, vegan egg, oat flour, and seasonings into a large mixing bowl. Use your hands to mix everything together to form the pizza dough.
  • On a parchment.lined baking sheet, press the dough down into an even circle.
  • Bake for 20- 25 minutes, until the edges are slightly golden, then remove from oven.

  • Add the toppings of your choice and bake for an additional 10 minutes. Enjoy!
