Try these delicious basket sliders for your next party! We made veggie patties from lentils and quinoa and of course we used fresh nut butter made with the NutraMilk which really helps to hold everything together and give it a good consistency. Not to mention that it adds more protein and flavor. Along with this creamy maple mustard spread made with cashew butter -It´s a perfect party dish!

INGREDIENTS

For cashew butter

  • 2 cups (300g) cashews
  • 1/8 teaspoon Pink Himalayan salt (optional)

Lentil quinoa burgers

  • 1 egg, or flax egg equivalent
  • 2 tbsp. nut butter of choice made with the NutraMilk
  • 1 tbsp. olive oil, plus some for cooking the burgers
  • ½ cup finely chopped red onions
  • 1 garlic clove, minced
  • ½ cup grated carrots
  • 2 tsp. chili powder
  • ½ tsp. smoked paprika
  • 1 ¾ cup cooked brown lentils
  • ¾ cup cooked quinoa
  • ¼ cup oat flour made with the NutraMilk
  • 3/4 tsp. fine sea salt or taste
  • freshly ground black pepper
  • burger buns of choice
  • 1 tsp. activated charcoal to decorate buns

Creamy maple mustard spread

  • 2 tbsp. cashew butter made with the NutraMilk
  • 2 tbsp. water, plus extra to thin
  • 1 tbsp. pure maple syrup
  • 1 tbsp. grainy mustard
  • 1 tbsp. lemon juice
  • 1 small clove of garlic, finely grated
  • sea salt to taste

INSTRUCTIONS

Making cashew butter

  • Place cashews and salt in the NutraMilk container.
  • Press Butter cycle, set for 5-6 minutes.
  • Press Start.
  • Open the container lid.
  • If necessary, set for an additional 1-2 minutes for a creamier butter.

Creamy maple mustard spread

  • Add all ingredients to a bowl and whisk until well combined.

Veggie burgers

  • Toast buns in oven if you prefer. Use a small brush to draw basketball lines with activated charcoal (mix 1 tsp or less with a bit of water).
  • Cook the lentils and quinoa, drain and keep aside.
  • If using a flax egg substitute, mix the flax and water and set aside.
  • Heat oil in a skillet over medium flame. Add the onions, garlic, and carrots, and sauté until the onions are translucent.
  • Transfer to the NutraMilk. Add cooked lentils, quinoa, nut butter, flax egg, spices, and mix for just a few seconds till everything is mixed and partly mashed. Transfer to a bowl.
  • Shape into burger patties or use a cookie cutter to make patties.
  • Heat a skillet over medium-high heat and pan fry the patties with or without oil for 4 to 6 mins, or until golden brown on both sides.
  • Serve with tomato, lettuce or arugula, red onion, and creamy maple mustard spread. Enjoy!
