These red, white and blue popsicles are made of just 3 fresh ingredients. They are vegan, paleo, keto and whole 30- friendly. Also dairy free, gluten-free, packed with antioxidants from the berries and creamy goodness from the freshly made coconut milk thanks to the NutraMilk. Enjoy!

INGREDIENTS

For Coconut Milk (yields 6 cups)

  • 2 cups (160g) of unsweetened dried coconut
  • 1 ½ quarts (6 cups) of water

For popsicle red layer:

  • 1 cup fresh raspberries
  • 1/2 cup coconut milk made with the NutraMilk

For the white Layer:

  • 1 cup coconut milk made with the NutraMilk

For the blue layer:

  • 1/2 cup fresh blueberries
  • 1/2 cup coconut milk made with the NutraMilk

*you can add 1 tbsp. of coconut yogurt to each layer if you want a creamier consistency.

INSTRUCTIONS

  • First, make your coconut milk from dehydrated coconut
    • Place the unsweetened dried coconut in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid and add 1 cup of water. Replace lid.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Repeat this step for each cup of water, until you have used all 6 cups.
    • Press Mix (do not change the default time)
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

*You can use more or less water depending on how full-bodied you want the milk to be.

*You can use the NutraMilk to blend your layers. No need to clean the containers after making coconut milk.

  • Add berries and coconut milk back into the NutraMilk and press mix until smooth.
  • Layer your pops: start by pouring the blueberry mixture in the bottom of each mold. Place popsicle stick into depending on the type of popsicle sticks you have or wait till the next layer. Freeze for about 1-1 1/2 hours until firm and pour in the second layer (white) and freeze for another 1-1/12 hours. Pour in your third layer (red) and freeze until completely solid. You can play around with the layers- change the order of the colors or add more layers to make stripes- just keep in mind that each layer has to be frozen in order to add the next one so you have to account for the time you have to make the popsicles.
  • To get popsicles out of molds, hold under warm water for 30 seconds and they should slide out. Enjoy!
