INGREDIENTS

For popsicles

  • 2 cups coconut milk made with the NutraMilk
  • 1 tsp pure vanilla bean paste or extract
  • 1/4 cup pure honey, divided* (you can replace for any other sweetener to make it vegan/paleo/keto friendly)
  • 3/4 cup blackberries
  • 3/4 cup raspberries
  • 1-2 tbsp. Sunfoods´s superfood smoothie mix (optional)

For Coconut Milk (yields 6 cups)

  • 2 cups (160g) of unsweetened dried coconut
  • 1 ½ quarts (6 cups) of water

INSTRUCTIONS

  • Making coconut milk from dehydrated coconut
    • Place the unsweetened dried coconut in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid and add 1 cup of water. Replace lid.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Repeat this step for each cup of water, until you have used all 6 cups.
    • Press Mix (do not change the default time)
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

*you can use more or less water depending on how full-bodied you want the milk to be.

  • Whisk together the coconut milk, vanilla and 2 Tbsp. of the honey, until smooth and creamy. Set aside.
  • Blend together the berries and remaining honey, until smooth and combined. Add more honey, to taste, as necessary.
  • You can layer the popsicles in various ways for a different look:
    • Stir together the coconut milk and berry puree, and divide evenly between the popsicle molds. Freeze for 30 minutes, then insert the popsicle sticks, and continue freezing for 4 hours, or until firm.

  • For a layered pop: Divide the some of the coconut milk between the popsicle molds. Place in the freezer for 10 minutes, or so, then top with the berry puree. You can freeze for another 30 minutes and add another layer of coconut milk and repeat depending on how many layers you want your popsicle to have. When all layers are done, place in the freezer for another 10 minutes and then insert the popsicle sticks and continue freezing for 4 hours, or until firm.

*Use sweetener of choice. If vegan, you can choose maple syrup or Agave. If on a Keto Diet, you can use monk fruit sweetener.
