Walnut Butter Baklava Spread

This flavorful and delicious spread is inspired by the traditional Greek dessert, Baklava.

It´s super easy to make in the NutraMilk and can be used as a dessert spread on bread or fresh fruit, stirred into oatmeal or used as an ingredient for a dessert recipe.

Being a walnut spread- you get all the goodies that walnuts offer: essential anti-inflammatory omega-3 linoleic acid (ALA), plant-based protein, fiber to keep your gut healthy and stay satiated and important health-promoting vitamins, minerals and antioxidants (vitamin E, magnesium, phosphorus, etc.). Enjoy!

INGREDIENTS

  • 2 cups (210g) raw walnuts
  • 1/8 tsp. ground cinnamon
  • 1/4 tsp. pure vanilla extract
  • 2 tbsp. softened butter (omit for dairy-free)
  • 1/4 tsp. Himalayan or sea salt
  • 3 tbsp. honey
  • 1-2 tbsp. brown sugar (optional - for extra sweetness)

For walnut butter

  • 2 cups (210g) raw walnuts
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Arrange walnuts in an even layer on baking sheet.
  • Bake for 10 minutes, stirring half way through.
  • Allow to cool at least 20-30 minutes.
  • Start by making walnut butter in the NutraMilk

    • Making walnut butter
    • Place walnuts and salt in the NutraMilk container.
    • Press Butter cycle, set for 4-5 minutes.
    • Press Start.
    • Open the container lid.
    • Add butter, cinnamon, vanilla, salt, honey and sugar. Mix until Incorporated.
  • Depending on what kind of texture you prefer- you can take out baklava spread at this point- do not over process.

  • If you prefer a smooth texture- you can add water (about ¼ cup) and mix for another minute or 2. The water will emulsify with the oil and you´ll get a white creamy paste that taste the same just looks different!

  • Transfer to a clean jar or airtight container and store in refrigerator. Enjoy!
