Upgrade your homemade bread with nut butter for added nutrition. This super easy to make bread is vegan, gluten-free and contains a good amount of protein thanks to the almond milk and peanut butter made in the NutaMlk, plus, lots of flavor! Serve with additional nut butter if you want to increase the protein content even more and top with fresh fruit or jam for a delicious and nutritious breakfast or snack.

INGREDIENTS

  • 2 cups gluten-free all purpose flour
  • ¼ cup granulated sugar of choice
  • 4 tsp. baking powder
  • ¾ cup plant-based milk made with the NutraMilk (I used almond)
  • ⅔ cup club soda (or ⅔ cup more milk)
  • ½ cup peanut butter made with the NutraMilk

For peanut butter

  • 2 cups (275g) peanuts (untoasted, unsalted)
  • pinch salt (optional)

For almond milk

  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

INSTRUCTIONS

  • Start by making the peanut butter
    • Place peanuts in the NutraMilk container.
    • Press Butter cycle, set for 2-3 minutes.
    • Press Start.
    • Open the container lid.
    • If necessary, set for an additional 1-2 minutes for a creamier butter.

  • Then make almond milk or other plant-based milk made with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with almond milk.
  • Preheat oven to 325 °F. Spray a loaf pan and line with parchment.
  • In a large mixing bowl, sift together the flour, sugar, and baking powder.
  • Add the milk and soda, stirring to combine. Fold in peanut butter and combine completely.
  • Transfer batter to prepared loaf pan.

  • Bake at 325 °F for 55-60 minutes or until an inserted toothpick comes out clean.

  • Serve as is or toasted, topped with nut butter and jelly of choice. Enjoy!
