This colorful mocktail or cocktail is easy to whip up and perfect to serve for your next gathering or make it and enjoy just for yourself!

INGREDIENTS

For cocktail/mocktail

  • 1 cup strawberries
  • 1 cup ice
  • 4 ounces light rum (optional/skip for a mocktail)
  • 1 medium banana
  • 1/4 cup pineapple juice (store bought or made with the NutraMilk)
  • 1/2 cup coconut milk made with the NutraMilk
  • fresh pineapple wedge, for garnish

For Coconut Milk (yields 6 cups)

  • 2 cups (160g) of unsweetened dried coconut
  • 1 quart (4 cups) of water

INSTRUCTIONS

  • Making coconut milk from dehydrated coconut
    • Place the unsweetened dried coconut in the NutraMilk container.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Open the container lid and add 1 cup of water. Replace lid.
    • Press Butter cycle, set for 1 minute.
    • Press Start.
    • Repeat this step for each cup of water, until you have used all 6 cups.
    • Press Mix (do not change the default time)
    • Press Dispense.
    • Press Start and open spigot to fill your storage container.

*you can use more or less water depending on how full-bodied you want the milk to be.

  • Making homemade pineapple juice.
    • Place 2 cups fresh pineapple, chopped in the NutraMilk and process until juice releases through filter. Dispense into container.
  • In the NutraMilk, combine the strawberries, ice and rum (for cocktail/skip for mocktail). Process until smooth.

  • Divide the mixture between two glasses with ice. They should be about 2/3 full.
  • Wash out the NutraMilk and add the banana, pineapple juice, and coconut milk. Blend until smooth.
  • Pour the coconut mixture into the strawberry base and it will slowly start to sink.
  • Serve with fresh pineapple wedges!
